Procedure
Nachos
1. Cut wonton wrappers in half diagonally. Heat deep fryer to 350°F. Working in batches, fry wonton wrappers until puffed and golden brown, about 1 to 2 minutes. Drain well. While still hot, season with Spicy Furikake. Hold ambient for service.
Chicken
1. Rub chicken with oil then season with salt and pepper. Grill until cooked through (internal temperature reaches 165°F). Allow to rest until cool enough to handle. Shred or dice chicken into bite-size pieces. Add the Stinging Honey Garlic Sauce and sesame seeds; mix well. Hold hot for service.
Sriracha Mayo
1. Combine sriracha, mayo, lemon juice and a pinch of salt. Mix to combine and hold refrigerated for service.
Service
1. Arrange wonton chips on serving platter. Add avocado, chicken, pickled jalapenos, green onion and cilantro. Drizzle with sriracha mayo then sprinkle with Spicy Furikake.
