Loaded fries on your menus? It doesn’t get any better than this: Crispy fries topped with queso, grilled chicken, and a sweet and savory boost of flavor and heat from Frank’s RedHot® Small Batch Firecracker Seasoning. Garnished with a Firecracker ranch drizzle and fried garlic chips.

Ingredients
Firecracker Cheese Sauce 
12 oz Velveeta, Cut Into Small Cubes
3 tbsps Butter
2 tbsps Milk
1/4 cup Flour
1 cup Sharp Cheddar Cheese, Shredded
3 tbsps Frank’s Redhot® Firecracker Seasoning

Firecracker Ranch
1 cup Ranch Dressing
1 tbsp Frank’s Redhot® Firecracker Seasoning

Loaded Fries
1 pound Beef, Ground
1/4 cup Onion, Minced
4 tbsps Frank’s Redhot® Firecracker Seasoning, Divided, Plus Additional For Garnish
2 pounds Fries, Frozen
10 oz Bacon, Cooked, Diced
1/4 cup Chives, Minced, For Garnish


Procedure
Prep
1. Prepare roux for the cheese sauce. In large pot or Dutch oven, melt butter over medium-high heat and whisk in the butter constantly until paste forms, 3 to 5 minutes. Slowly add in milk and whisk until roux thickens milk to a thick nappe (consistency), about 4 to 6 minutes. Ensure milk does not come to a full boil. Remove from heat once desired thickness is reached. Add seasoning and cheese; mix well until thoroughly combined. Hold warm for service.

2. For the Firecracker Ranch mix ingredients in small bowl. Hold cold for service.

3. Mix 2 tablespoons Firecracker Seasoning with ground beef and onion. Brown seasoned ground beef and onion in a large pan. Hold warm for service.

4. Fry frozen fries per package instructions. Once cooked and drained of excess oil, toss in remaining 2 tablespoons Firecracker Seasoning. Hold warm for service.

Service
1. Combine fries, beef and bacon together. Top with Firecracker cheese sauce, Firecracker ranch and garnish with chives. Serve immediately.
