Sweet potato wedges roasted with adobo spice, drizzled with lime crema and crowned with cotija and cilantro for a fresh, zesty finish. 

Ingredients
Sweet Potato Wedges
2 sweet potatoes, medium, cut into wedges
1 tbsp. olive oil
1 1/2 tsp. Lawry's® Adobo Seasoning
Cilantro, fresh, chopped
Cotija cheese, crumbled 

Lime Crema
1/2 cup Mexican crema or sour cream
1 tbsp. lime juice
1 tsp. lime zest
1/4 tsp. Lawry's® Adobo Seasoning 

Procedure
Sweet Potato Wedges

  1. Toss sweet potato wedges with oil and Adobo Seasoning.
  2. Roast at 425°F for 15 minutes. Flip, then roast 8 to 12 minutes longer or until cooked through. 

Lime Crema

  1. Mix sour cream, lime juice and zest, and Adobo in bowl. Hold refrigerated for service. 

Service

  1. Serve wedges sprinkled with cilantro and cotija cheese. Serve with Lime Crema on the side for dipping.
