Sweet potato wedges roasted with adobo spice, drizzled with lime crema and crowned with cotija and cilantro for a fresh, zesty finish.
Ingredients
Sweet Potato Wedges
2 sweet potatoes, medium, cut into wedges
1 tbsp. olive oil
1 1/2 tsp. Lawry's® Adobo Seasoning
Cilantro, fresh, chopped
Cotija cheese, crumbled
Lime Crema
1/2 cup Mexican crema or sour cream
1 tbsp. lime juice
1 tsp. lime zest
1/4 tsp. Lawry's® Adobo Seasoning
Procedure
Sweet Potato Wedges
- Toss sweet potato wedges with oil and Adobo Seasoning.
- Roast at 425°F for 15 minutes. Flip, then roast 8 to 12 minutes longer or until cooked through.
Lime Crema
- Mix sour cream, lime juice and zest, and Adobo in bowl. Hold refrigerated for service.
Service
- Serve wedges sprinkled with cilantro and cotija cheese. Serve with Lime Crema on the side for dipping.
